"Louis Moskow, chef-owner of 315 Restaurant & Wine Bar, is passionate about ingredients. Even in food-savvy Santa Fe, his dedication is unusual. In contrast to what some of the city's best reataurants do with their menus, he changes more than just the date at the top of the page. If Moskow is excited about the mussels, get them, even if you're not crazy about mussels. He's not afraid to shoot for the moon: asparagus, peas, fiddleheads, and ramps in one dish may sound like too much spring, but he makes it work. The first - and often the only - wild salmon in town is likely to be found here. When fall rolls around, pork loin stuffed with sun-dried tomato sausage comes with porcini mushroom cavatelli. And the wine selection is one of the best in a city thick with cookie-cutter lists. The regular offerings are stellar, but ask Moskow if he's got anything special on his reserve list and you could be in for a major treat, especially if you share his love of Pinot Noir."
