The Santa
Fe New Mexican
Moskow has carved a name for himself in a town
filled with big-name chefs. He creates his menus at 315 Restaurant & Wine Bar
based on the philosophy
that every dish should be fresh
and seasonal. He is an expert at pairing food with wine and hosts dinners matching
celebrated wines of France and other countries with his innovative fare.
Gourmet
Louis Moskow ... is passionate about ingredients.
Even in food savvy Santa Fe, his dedication is unusual. If Moskow is excited
about mussels, get them,
even if you're not crazy about mussels. The first–and often the only–wild
salmon in town is likely to be found here. In the fall ... you'll likely
find ... pork loin stuffed with sun-dried tomato sausage and served with
porcini mushroom cavatelli. And the wine selection is one of the best in a
city thick with cookie-cutter lists. Ask Moskow if he's got anything special
on his reserve list and you could be in for a major treat, especially if
you share his love of Pinot Noir.
Bon Appétit
315 Restaurant & Wine Bar ... is one of the
city's hotspots under chef Louis Moskow, who trained with such luminaries as
Alfred
Portale
and Emeril Lagasse. The restaurant
has all the hallmarks of a French bistro, including white-linen-topped tables,
lace curtains, a chalkboard menu and an extensive French wine list. The food
has clever twists, including dishes like squash blossom beignets teamed with
goat cheese fondue and tomato coulis, and grilled veal flank with pea flan,
pea tendrils and wild mushroom fricassee.
The Wine Spectator
Award of Excellence bestowed upon 315 Restaurant
& Wine Bar for its outstanding wine list. |
